The ingredients needed to make Foxtail millet payasam:
- Make ready 1/2 cup millet Foxtail (thinai) -
- Prepare 2.5 cups Water -
- Take 3/4 cup jaggery Powdered -
- Get Milk - as needed
- Prepare pinch Cardamom powder - a
- Make ready Cashews - as needed
- Take Raisins - as needed
- Make ready 1 tsp ghee -
Boil the filtered jaggery, when it becomes slightly thick, add the cooked foxtail millet. Cook on medium flame until it gets blended well with the jaggery. Then add cashew nuts, raisins and cardamom powder. Simmer and add milk, heat it on low flames for a few seconds and switch it off.
Steps to make Foxtail millet payasam:
- Wash the foxtail millet and pressure cook with 2 cups of water for 3 whistles in medium flame and 5 min in low flame.
- Once pressure is released, take it out.
- Meanwhile, melt jaggery with 1/2 cup water. Strain for any impurities.
- Add the melted jaggery to the cooked millet and let it come to a boil.
- Add milk as needed, to get the required payasam consistency.
- Add cardamom powder and switch off the flame.
- Garnish with cashews and raisins toasted in ghee.
Then add cashew nuts, raisins and cardamom powder. Simmer and add milk, heat it on low flames for a few seconds and switch it off. You might have to add more water. Foxtail Millet Coconut Kheer, a healthy coconut milk payasam made from foxtail millet / thinai. This payasam can be tried with any millet variety, but thinai always goes well with the sweet / dessert.
